Basic Green Chile Sauce

3 Tbsp cooking oil
1 small onion chopped
4-6 garlic cloves, minced
1 tsp cumin
1 tsp oregano
3 Tbsp flour
1 potato cubed and cooked (optional)
6-8 Cup water with 1 chicken bullion cube or two 32 oz boxes of chicken stock
6 Tbsp powdered green chile or 1/2 to 1 Cup crushed green chile
salt to taste
Saute onion, garlic and spices in 2 Tbsp oil until translucent.
Lightly brown flour in remaining oil.
Add remaining ingredients and simmer 20 minutes uncovered to reduce volume.
Add mashed potato for added thickness, if desired.
