Garam Masala is a general-purpose Indian seasoning, traditional ingredient in Indian dahl, kormas, samosas and tandoori, primarily to flavor meat and poultry. It’s common in pilaf dishes and a wide variety of vegetables. Try it on squashes like butternut, acorn, or winter squash. Mix it into mashed sweet potatoes. Add this blend towards the end of cooking so the flavor is not lost. Hand blended small batches from cumin, ground coriander, cardamom powder, black pepper, Ceylon cinnamon, ground clove, ground nutmeg and saffron.
