Urfa Biber Chiles are indigenous to southeastern Turkey, also known as “Isot pepper,”. Matured to a bright red, harvested, & cured for a week in the sun by day, then covered up & wrapped tightly to encourage “sweating,” by night, becoming a blackish-purple garnet color. Flavor is complex with a smoky earthy edge with undertones of coffee, chocolate, tobacco & raisins with delightfully nuanced heat.
